Tacos

  1. Cook the beef

Heat a tablespoon of olive oil in a large skillet over medium high heat. Soften the onion and bell pepper, then add the beef and cook until browned.

  2. Season

Drain any extra fat, stir in the taco seasoning and cook 5 more minutes.

  3. Assemble

Warm the tortillas, fill with the beef and top with lettuce, tomatoes and salsa. Serve right away with rice, beans or guacamole on the side.

Burritos

  1. Cook the beef

Soften the onion and bell pepper in olive oil, then add the beef and cook until browned.

  2. Season

Drain any extra fat, stir in the burrito seasoning and the black beans, and cook 5 more minutes.

  3. Fill and roll

Warm the tortillas. Add the beef and beans, rice, tomatoes and guacamole, fold in the sides and roll up. Serve right away, or wrap in foil to keep warm.

Chef’s Notes

  • Thaw the beef in the refrigerator for 24 to 48 hours first.
  • Homemade seasoning: chili powder, cumin, garlic powder, onion powder, oregano and paprika.
  • Top with avocado, cilantro, lime or pickled jalapeños.
