The term “Wagyu” simply means “Japanese cow” and refers to several breeds of Japanese cattle known for their unique marbling. American Wagyu is produced using these Wagyu genetics but is bred and raised in the United States, often in combination with American beef breeds like Angus. Therefore, while it’s not Japanese, it’s called Wagyu to indicate the type of genetics that contribute to its premium quality.
